Here's a few pictures of our beloved Royal Albert Teapot and Teacup - Heirloom Pattern! It is so beautiful, but sadly the camera has never been able to capture it's splendor to the fullest!! I took many pictures this morning, but to no avail... these were the only two that were somewhat suitable! Maybe I should ask Santa for a new camera!!

With a Grateful Heart

Thank you to every one on Facebook who sent up prayers for Donna's Dad -- and Miss Spenser's English Grandpa!! (His English heritage is far back...but with a last name like Cherryholmes...well, we like to pretend it's recent! smiles). On Saturday morning, Grandpa had a mild heart attack. The doctors did a lot of testing and scans of his heart; they have changed a few meds, sent him home with a new diet, and more exercise...so hopefully, things will be okay!

A special "heart" thank you to all the heart doctors out there...medicine has certainly come a long way; we are so very grateful for that!!

Thought we'd share with you today a lovely photo-art that Zachary Hardin took. Notice how the handles refect a heart shape.

Again thank you for all your 'heart-felt' concerns and prayers, they were very much appreciated! He's the best grandpa (and dad) that any one could ask for...we are blessed. Praying for many more happy and healthy years! Love you Grandpa!!

Favorite Cranberry Salad

1 10 ounce package of Fresh Cranberries, washed and picked over
4 C Water
¼ tsp. Baking Soda
2 C Sugar
3 – 3 oz. boxes Strawberry Gelatin
4 C Miniature Marshmallows
2 C Apple, peeled and diced
1 C chopped Nuts, optional
1 9 ounce Can Crushed Pineapple, drained
2 Navel Oranges, peeled and sectioned
1 or 2 C seedless green or red Grapes, halved

Cook cranberries in the 4 C water to a boil. Add soda and stir. Simmer 10 minutes. Stir in sugar, gelatin and marshmallows. Stir until melted. Let mixture cool. Add apples, nuts, pineapple, orange sections and grapes. Pour into a 9x13 pan and one 8x8 pan. Chill until firm. Will serve 20 or more.

Recipe ~ Poppy Seed Cake

The glaze drizzled over this simple cake is what makes it stand apart from other poppy seed cakes…Enjoy!!

1 pkg. Yellow Cake Mix
1 C Oil
1 C Sour Cream
½ C Sugar
4 Eggs, Beaten
¼ C Poppy Seed

Beat together all ingredients; pour into a greased and floured Bundt cake pan; bake at 325 for about one hour. (I always start checking at about 50 minutes). Let cool in pan for 10 minutes – invert and pour glaze over top. Serves 8-10

Glaze:
½ C Sugar
¼ C Orange Juice
½ tsp. Almond Extract
½ tsp. Butter Extract
½ tsp. Vanilla Extract

Happy Teacup Thursday! Today, I'm sharing with you my "Audrey Hepburn" china... I'm not sure what the real name of this print is, but when I saw it in an Antique Store, I thought it spoke "Audrey". It must be the turquoise color that reminded me of Breakfast at Tiffany's! I've had fun collecting different turquoise color pieces over the past few years to add to my "Audrey" set!

Autumn in England... The Mosaic of All Seasons

One of the first questions we posed to Alan and Ilse was, “What is Fall like in England?” Being the proper English gentleman that Alan is, he carefully informed us that the English refer to this season as “Autumn”, not “Fall”… which does have a lovely ring to it, don’t you think? It’s much more poetic and enticing than just plain “Fall” So…we are working on changing our vocabulary around here! (smiles)

Much like the States, Autumn is a time when the land sheds it lush green shades and turns mosaic in nature. Although ‘Autumn’s colours’ in England may not be as dramatic as one would enjoy in “New England,” the striking shades of golds, yellows and reddy-browns provide a brilliant display to please the eye.

How long it lasts is weather dependent and varies from year to year, but it’s usually best when they have had a dry summer. October is the month when weather patterns shift and they start to receive the tail end of the depressions that cause hurricanes on the East Coast. It isn’t uncommon for leaves to remain on the Oak trees well into November until they get the strong winds or frosts.

The Ridgeways have a Bonsai Maple which is looking very pretty now with a nice mix of greens and reds and some lovely mature Horse-Chestnut trees out the front of their home. They tell us the leaves are already falling and are an orange-brown…a glorious last hurrah before winter sets in.

Miss Spenser's Friends Across the Pond

Dear Tea Friends, please meet Miss Spenser’s Friends Across the Pond, Alan and Ilse Ridgeway of Horsham, England.

Last Fall, we received a note from Alan stating he’d like to visit our tearoom in 2011 while they were visiting family in the Des Moines area. He had filled out the contact form bearing an “English” address. Miss Spenser asked, “Is this guy for real?” (smiles) Well, we are happy to say, “Yes, these folks are for real!!”

This past June, we had the privilege of meeting Alan, his wife, Ilse, her sister, Erika, and her husband, Paul. Now, you can only imagine our concern when we realized that we would be hosting tea to ‘real’ English people!! Of course, we had done our research on English tearooms, but as you know, we hadn’t formally been there yet. We felt much like Mrs. Cratchit when she had her doubts about the flour concerning the plum pudding!! However, as soon as they arrived, they quickly put us at ease and Alan reassured us that we had the scones, “just right.” Whew!!

From there, our friendship has continued to blossom and Alan and Ilse have agreed to share with Miss Spenser’s blogging friends ‘their’ England and ‘their’ life at least once a quarter. (We hope more often, but hate to impose too much!!) If there are things that you’d like to know about England, pass those questions on and we’ll see if we can get them addressed!

Isn't this Teacup lovely!? I received it for my birthday on Tuesday. I have always loved fall... so this Haviland teacup is perfect for me! It's called "Autumn Leaf".

The card in the background was painted by our artist friend, John Preston. My whole family and I feel so honored to be considered friends of John and his wife Cindy... John always sends us lovely cards for our birthdays!!

Overcoming a Childhood Fear

I am sure many of you have stories of childhood fears…mine (Donna) was the pressure cooker!! I grew up in a family of 8 kids…the dinner hour was always a sacred time, so many happy memories have been shared around the dinner table. However one particular day, back in the 1970's, all the kids were seated in our mom’s fancy avocado green kitchen in our very fashionable booth-like table . Our littlest brother was situated in his highchair at the end where our parents sat. Mom was just finishing up some vegetables in the pressure cooker when something malfunctioned -- our dad started hollering for us kids to "get out of the kitchen!!" Can you imagine 7 panicked kids trying to get out of that fashionable “booth” seating all at the same time?! In looking back, I am sure it was pretty hysterical!! All the while, Dad picking up our little brother in his high chair and hoisting him “high chair and all” down the hallway!! Thankfully, everything turned out just fine…and I am not really sure what happened with the pressure cooker, but from that moment on, I knew I never wanted to use one.

So what does my mom do??? She gives me a pressure cooker for Christmas about 10 years ago. "Wow, thanks Mom! Just what I've always wanted!" (NOT! ha-ha) I didn’t have the heart to tell her I was scared of it…so it sat on a basement shelf ever since!

When my parents came for a visit this past weekend… I decided it was time to conquer that childhood fear and asked my mom to give me a Pressure Cooker 101 Course!! I am happy to say that I passed with flying colors...and I am no longer scared of this contraption!! Thinking now how wonderful it will be to use for chicken salads!!

Happily Ever After...

I'm the Lucky One!!

30 years ago today, I became the wife of Don Hardin…I recall waking that morning feeling so happy…so excited to embark on my new life/journey. Today…30 years later, I found myself waking with that same happy feeling, but perhaps with a deeper sense of happiness and love!

We already took our 7 day road trip in June, however, Don surprised me and took the day off so we could spend it together! We plan on visiting a few garden shops, lunching out, and maybe dinner…if I can stay away from the kiddos that long…(smiles)…I always enjoy sharing holidays and joyous occasions with them too!

Thank you for allowing me to share my anniversary with you…do you recognize this couple…here we are on our wedding day…

And…today, 30 years later…“Happily Ever After…”

A Tribute to a Kindred Spirit

October 28, 1926 – May 8, 2011

I had always noticed Doris in church…she was this beautiful, classy woman who attended our Sunday School Class. One day after church, a family invited us over for dinner, and Doris was also one of the special guests. It was here that I learned about this classy woman’s career as a former boutique/dress owner from Spencer, Iowa…yes, even at 80, she dressed so lovely!!

Our family ended up moving 35 minutes south of Des Moines, so we began attending church in our little town...so I kinda lost touch with Doris. One day, Spenser and I had done a program for a Quester gathering; afterwards, up came this beautiful dressed woman…it was Doris. It was fun to reconnect; she was so excited about our tearoom!

In the Fall of 2009, I received a phone call from Doris letting me know she would be moving to a retirement center near her son in Oskaloosa, Iowa. She was looking for a good home for her lovely hats and wanted us to come take a look; she thought they’d be perfect for the tearoom. At this time, Don was unemployed, so extra funds were hard to come by. I tried my best to gently let her know I wasn’t in the position to purchase her hats right now. Well, from her past sales experience she graciously said, “Well, don’t worry about that right now…why don’t you come and take a peek.” So, Spenser and I agreed…at the last minute, before we left, we thought it would be fun to pack up a mini tea party in a basket. We had some spreads leftover from a previous tea and as we approached town, we made a stop at the store and picked up a few other pretties for our party.

You can only imagine our surprise when we opened the door to her apartment to find all kinds of tea “things!” It was breathtaking…here we were, kindred, tea party friends! Doris LOVED the surprise tea party and thought everything was so delicious…of course, I don’t think she would have said anything if it hadn’t been…she was much too gracious for that. (We blogged about our visit here in Cup of Cheer)

We had such a wonderful day…she told us all about her career and how she taught fashion merchandise at the local college and how she later opened up her own boutique in Spencer, Iowa. (We liked the ‘Spencer’ connection – even though the town is not spelled the same way Miss Spenser spells her name!) When it came time to view the hats…she was like a mother with her children, so proud of them, and just as I had guessed, they were all so lovely! Again, her business experience came out when she began to barter with us…”How about we exchange my hats for you hosting a tea party for me and my friends.” She was really set on her hats finding a good home…

It was our honor and privilege to host that tea party for her last June…it was such a special day, I think she smiled the entire time, little did we know, this would be the last time we would see her. The Greek meaning of her name is ‘gift/bounty.’ I cannot think of a better character trait than that…she blessed Miss Spenser and I abundantly with the gift of her friendship and her lovely hats. Her legacy lives on here at the tearoom as others have an opportunity to enjoy and wear her lovely hats. I am sure that Doris smiles down from Heaven knowing her hats are lovingly cared for.

As many of your already know, Johnson Brothers, is one of our favorite china companies! We joke that mom can spot a Johnson Brother pattern from miles away! Haa-haa!

This is one of my favorites as I love the color brown! This set is actually a birthday present my mom bought for herself (smile) last year for her 49th Birthday!

Here’s pictures of a Rose Teacup that we have… I love this pattern! We drank strawberry tea and ate Rose Cake (made with real roses!)

Hope you are all enjoying this lovely month of roses. They are in full bloom here. Actually the other day, mom and I were walking on the gravel roads and the sweetest fragrance came through the air… Guess what it was?? White Wild Rose Bushes growing along side of the road! They smelt Heavenly!!

Recipe ~ Gourmet Potato Salad

Gourmet Potato Salad

7 med. potatoes, cooked in salt
1/2 c. salad oil
2 tbsp. vinegar
1 tsp. salt
1/4 tsp. each of garlic & onion powder
1/4 tsp. black pepper
4 eggs, boiled
3/4 c. celery, diced
1/3 c. green onion, sliced
1 c. mayonnaise
1/2 c. sour cream
2 tsp. dill weed

Cook potatoes, marinate potatoes in oil, vinegar, salt, garlic and onion powder and black pepper for 2 hours or more; drain. Slice potatoes. Add above ingredients. Make dressing of mayonnaise, sour cream and chill.

Happy Mother’s Day! Hope you all are enjoying the day with your family.

Mothers Day is a special day… but to my family, this mother’s day is twice as special as it also happens to be Mom’s birthday (and a special birthday at that – 50! But don’t tell her I told you!)

We’ve been celebrating her birthday all week long! On Friday, mom and I headed down to Kansas City for a girls overnight stay. We shopped at Antique Stores on the way down, stayed at a hotel there on the Plaza, did some more shopping… We found some nice little treasures that we’ll be sure to share pictures with all of you soon! So be watching!

Highlights from the Royal Wedding Afterglow Tea Party

What a festive tea party we had this past weekend! Guests arrived

all decked out in lovely hats, fascinators and tiaras! The mood was very festive and celebratory, all in high hopes and well wishes for the newly married royal couple.

Guests enjoyed a delicious four course "royal" tea -- we started the tea off with Middleton Chilled Fruit Soup. After the first course, the tiered trays came out laden with savories, scones and sweets... To name a few, Queenly Carmelized Peach Quiche; Sapphire "Blue"berry Tea Sandwiches, Prince William's Classic Cucumber; Royal Scones...

In Memory of Diana - Princess Diana Wedding Cupcakes topped with sugared sweet violets representing faithfulness.

Guests enjoyed our Royal Wedding Blend, a hearty blend of three China black teas.

We had a special guest all the way from England - The Queen herself!! (Can you spot her in the photo above?)

Miss Spenser re-created Kate's Blue-Engagement Dress.

All in All... it was a very Happy Day!

We wish the very best to Prince William and Duchess Catherine!!

Celebrating the Royal Wedding

Like most of the world today... we woke up early this morning to 'attend' the Royal Wedding of Prince William and Kate Middleton! What a fun time we had celebrating this morning, even the boys got up early to watch this historic event!!

Lady Donna crafted this chocolate/biscuit cake which is Prince William's favorite! It is very good... and very rich!! Planning on doing some more celebrating later today and will enjoy a piece of it along with our Royal Tea Blend!! Guests attending tomorrow's Afterglow Tea party will get a sample of this unique cake!

This teacup Thursday I'd like to share with you a teacup I do not actually have in my 'possession'... yet! A few weeks ago I got a call from a Tea Friend/Customer who was vacationing in Florida. She saw some Prince William and Kate TeaMugs and wanted to know if I'd like her to pick me up one... "Of COURSE!" You could say, I'm "Royally Obsessed" with this grand affair!

After hearing her describe to me what the mug looked like... I'm guessing this is what the TeaMug will look like.

Inscription reads: "To Celebrate the Wedding of Prince William & Catherine Middleton 29th , April 2011"

Our friend is on her way back from Florida so hopefully I'll have this momentous teamug in my hands soon!! It will be fun to see if I guessed correctly!!

Royal Wedding Talk... The Wedding Cake

We have enjoyed following all of the information on the Royal Wedding, what will we do after it’s all over?! (smiles) As someone who loves the “food” part, of course, I found myself interested in what the wedding cakes will be served for the Royal Wedding.

From my reading I learned that one of Queen Elizabeth’s favorite cakes is Chocolate Biscuit Cake, however, she is not the only one who loves this cake! It is reported that this was always on the menu when Prince William would be attending afternoon tea with the Queen. Prince William has ordered this as one of the wedding cakes to be served on the 29th.

In keeping with tradition, however, English wedding cakes are generally fruit cakes that contain nuts, dried fruit and brandy. We have a delicious fruitcake recipe that we had thought about serving at our Royal Tea party, unfortunately though, time got away from us, so we were not able to make it as the cake needs to be made at least 8 weeks in advance and doused with Brandy every week.

In an attempt to honor Princess Diana’s memory, we opted to make her fruitcake instead. (Click here for Recipe) For Diana’s wedding in 1981, her cake was made by baker, David Avery. Princess Diana was just 19 years old when she met David Avery, Baker from the Royal Navy Cookery School. The school had been asked to prepare the cake because of Prince Charle’s Navy experience.

The official royal wedding cake was a rich 5 tier fruitcake, that stood 5 foot and 4 inches tall and was 3 feet at its widest point on the bottom layer. It took 14 weeks to design. Just in case of an accident an identical wedding cake was created! The cake was iced with royal icing…naturally!

Confectioner David Avery treasures a photograph of himself and his proudest achievement – the five-tier official royal wedding cake which Charles and Diana cut together on their wedding day in 1981. Avery says he was touched to see how excited and nervous the young bride-to-be was on their first meeting, stating he was every bit as excited and nervous as she was! David went on to transform the second tier of the wedding cake into Prince William's christening cake, and then to concoct the young prince's first birthday cake too.

Princess Diana's Wedding Cake Recipe

Princess Diana’s Wedding Cake Recipe

3 eggs, beaten with mixer 
1 3/4 cup granulated sugar 
1 teaspoon vanilla extract 
2 1/4 cups flour 
1 1/2 teaspoon cinnamon 
1 teaspoon baking soda 
8 ounces crushed pineapple, with juice 
1 1/2 cup chopped bananas 
1 cup chopped apples 
3/4 cup coconut 
3/4 cup chopped nuts 

Frosting
8 ounces cream cheese 
1 Stick of Butter 
1 teaspoon vanilla extract 
3 cups powdered sugar

PREPARATION:
Grease and flour the bottom of a 9 x 13-inch pan.   Mix together the oil, eggs, sugar and vanilla extract. Sift the dry ingredients; add to mixture. Add remaining ingredients. Bake at 350 degrees for 48 minutes.   

Frosting:   Mix butter and vanilla extract into cream cheese. Add powdered sugar. Mix well.1 1/4 cup oil 

Excitments in the Royal Kitchen

You could say that we are Royally Obsessed with the upcoming Royal Wedding this week!! Once again, fascinated by the cookery of the event…I enjoyed learning about the people behind the scenes…the Kitchen Staff.

Mark Flanagan of Buckingham Palace and his staff of 21 will be treating 600 guests to the canapés made from the best of British produce. Unfortunately for me…he is keeping quiet about the full menu until April 29, but the selection could include smoked salmon, beetroot blini, confit duck-leg terrine with smoked duck and pear chutney, quail eggs with celery salt, goat cheese and caramelized walnuts and parmesan crisp…why I feel exhausted already!! (smiles). Flanagan states that, “At any large event, we are always conscious of trying to make sure we uphold people’s expectations when they come to Buckingham Palace…for a lot of people, it will be a once-in-a-lifetime opportunity.” It’s their goal that they leave thinking everything was spectacular, especially the food!

Here at Miss Spenser’s we know what they are talking about…we not only want our guests to enjoy the environment, the programs, but also the foods…we are quite picky about the recipes we choose and the ingredients we use. Although, you will not be leaving Buckingham Palace, it too is our desire, that you leave thinking that everything was spectacular!

We understand the tensions they mention as the special event nears…many canapé type foods (or for us, tea foods), cannot be completed until the last minute. There are a lot of things you’d like to do ahead of time, but in all reality, it cannot be done until we see the guests arriving. Royal pastry Chef, Kathryn Boyden, has a bit more prep time when preparing the sweets, however, her team of 3 will not be able to take in the festivities of the wedding celebration because they will be working while every one else in the country is watching it. A total of 60 people from chefs to those opening car doors and pouring champagne will be working at the palace on the big day.

The palace has confirmed the rooms that will be used for the Queen’s reception, The White Drawing Room, Music Room, Blue Drawing Room, State Dining Room and the Picture Gallery, where the wedding cake will be displayed…What an exciting time this will be!!

Can you believe it! It’s been a year of Teacup Thursdays!!

This is the first teacup we shared. We originally started Teacup Thursday to showcase teacups from our collection and to use that selected teacup for the day. I can hardly believe it’s been a year of teacups! What fun it’s been to have so many of you join us!!

We thought we’d expand on our fun and include teapots, tea parties, and other tea trinkets to the day. We invite you to join us!!
